Approximately four months after barreling, you will return to rack the wine. During this process, the wine is pumped from the oak barrel into a stainless steel tank and the accumulated sediment (lees) in the bottom of the barrel is washed out with a high pressure hose, the wine is reintroduced into the fresh barrel, and “top off” wine is added to bring the wine level to the bottom of the permanent “bung”, which you will insert with appropriate ceremony. During this phase, you will have the opportunity to taste your wine. At this point, the barrel will be returned to the cellar for further aging. (Duration 1 hour)
